HAM FILLED COUNTRY CHEESE
BISCUITS
 
1 tbsp. butter
1/3 c. chopped green onion
2 c. all purpose flour
2 tsp. baking powder
1 tsp. salt
1/8 tsp. red pepper
6 tbsp. butter
1 c. (4 oz.) shredded Swiss
3/4 c. cold milk
10 slices baked ham, cut about 1/2" thick

Preheat oven to 425 degrees. Melt 1 tablespoon butter in small skillet. Saute onion until tender, about 3 minutes; set aside. Combine flour, baking powder, salt and red pepper in large mixing bowl. Cut in 6 tablespoons butter until mixture resembles coarse crumbs. Stir in cheese and onion mixture. Sprinkle milk over mixture. Stir with fork just until dough holds together. Gather dough into ball. Knead gently 7 to 8 times on lightly floured surface. Roll out to 1/2" thickness. Cut into 3" circles using floured biscuit cutter. Bake on ungreased cookie sheet about 20 minutes or until lightly browned. Remove and cool to room temperature on racks. To serve, split butter, cut surfaces and place ham slice on each biscuit.
