HAM AND CHEESE BISCUITS 
3/4 c. chopped ham
1/2 c. finely chopped onion
1/2 c. finely chopped Monterey Jack cheese
2 tbsp. parsley flakes
1 egg
1/2 c. milk
2 tbsp. oil
3 c. buttermilk baking mix
Melted butter
1 tbsp. dried herbs (sage, oregano, thyme combined to equal 1 tbsp.)

Combine ham, cheese, and dried parsley in a bowl. In separate bowl, beat together eggs, milk, and oil. Add 2 cups buttermilk and baking mix. Blend well.

Add ham mixture; stir until mixed well. Add remaining buttermilk mix. Turn dough onto floured surface. Knead about 10 times or until dough holds together. Roll to 3/4 inch. Cut with 2 inch cutter. Place on greased baking sheet. Brush with melted butter. Sprinkle with herbs. Bake at 425 degrees for 10-12 minutes or until golden brown.

Serve at once.
