SWISS STEAK | |
2 lb. thin round steak 1 tsp. salt 2 tbsp. shortening 1 med. chopped onion 1/2 tsp. Worcestershire sauce 1 sm. can tomato sauce 1 1/2 c. water or V-8 Juice 3 tbsp. flour 1/4 lb. butter 2 cans undrained tomatoes 2 med. chopped green peppers 2 tsp. garlic salt, pepper, oregano, and parsley 1 (6 oz.) can tomato paste 1. Trim fat from steak. Cut into serving size pieces. 2. Coat meat in flour and salt mixture and pound each piece. 3. Heat butter and shortening. Brown meat on each side about 10 minutes. Remove and set aside. 4. Brown onions and pepper until tender. 5. Add undrained tomatoes, spices, sauce, paste, and water or V-8 Juice. 6. Add meat back to skillet. Bring to boil, then simmer 2-3 hours. 7. Before serving, add 1 cup cold milk and 2 tablespoons flour (making a thickening paste). Add to sauce. Bring to boil. 8. Serve with mashed potatoes, rice or spaghetti. |
