HAM SLICE IN CUMBERLAND SAUCE | |
1 c. ruby port 1/2 c. dark seedless raisins 1/4 c. red currant jelly 1 tsp. dry mustard 1/2 tsp. grated lemon peel 1/2 tsp. grated orange peel (optional) 1/4 tsp. allspice 1 fully cooked ham slice, cut about 1 1/2 inches thick (approx. 2 1/2 lbs.) 2 tbsp. cornstarch 1/4 c. orange juice Preheat oven to 325. In small saucepan over medium heat, heat to boiling first 7 ingredients. Meanwhile, slash fat edges of ham slice and put in 10x6 baking dish. In cup, blend cornstarch and orange juice until smooth; gradually stir into hot wine mixture and cook, stirring constantly until thickened. Pour over ham slice in baking dish. Cover tightly with foil and bake approximately 1 1/4 hours. Makes 8 servings. |
