GLORIA'S CORNBREAD | |
1/4 c. brown sugar, packed 1/3 c. maple syrup 2 lg. eggs 2 c. flour 1 tbsp. baking powder 1/4 tsp. maple flavoring 3/4 tsp. salt 1 c. yellow corn meal 1 1/2 c. milk 1/2 c. butter, melted Heat oven to 425 degrees. Grease 13 x 9 x 2 inch baking pan. Mix sugar and syrup in a medium sized bowl. Beat in eggs. Add flour, baking powder and salt over the egg mixture. Add corn meal and beat briskly until blended and fluffy. Add milk and 1/4 cup of the melted butter. Beat until well blended. Pour mixture into greased pan and spread evenly. Bake 20 to 25 minutes until golden brown. Brush top of bread with remaining melted butter and let bread cool in pan about 10 minutes before cutting. This is a sweet version of cornbread. It will be your favorite. |
