CREAMY EGG NOG 
1/3 c. sugar
2 eggs, separated
1/4 tsp. salt
4 c. milk
3 tbsp. sugar
1 tsp. vanilla
1/2 c. heavy cream

Beat 1/3 cup sugar and egg yolks together. Add salt, stir in milk. Cook over medium heat, stirring constantly until mixture coats spoon. Cool mixture. Beat egg whites until foamy, gradually add 3 tablespoons sugar, beat until soft peaks form, add to custard mixture and mix thoroughly. Add vanilla and sprinkle with nutmeg. Whip heavy cream and float on top. Makes 8 (1/2 cup) servings.
