CANNED APPLES FOR PIES 
5 1/2 - 6 lbs. apples
1 c. cornstarch
1/4 tsp. nutmeg
4 1/2 c. sugar
2 tsp. cinnamon
3 tbsp. lemon juice

Mix sugar, cornstarch, cinnamon and nutmeg. Add 10 cups water. Cook until thick and bubbly. Add lemon juice.

Put apples in jars and pour the above mixture in jars. Leave 1/2 inch headspace. Cook in hot water bath for 15 minutes for pints; 20 minutes for quarts. Makes almost 6 quarts.
