BLACKEYED PEA PATTIES 
1 can dry blackeyed peas
1 egg
1/2 c. chopped onions
1/2 c. flour
Salt and pepper to taste
Grease or oil for frying

Drain peas and mash into a pulp. Add egg and chopped onion. Salt and pepper to taste. Add flour; mix well. Fry until brown on both sides.

Gravy: Heat 1 1/2 cups water; add 2 bouillon cubes. Add 1 tablespoon soy sauce. Thicken with cornstarch or flour. Serve over patties.
