SCAMPI MADE EASY 
2 lbs. medium shrimp
1/4 c. butter
1/2 c. olive oil
1/2 c. onion, minced
3 tbsp. garlic, minced
1/4 c. lemon juice
6 tbsp. minced parsley
1/2 c. dry white or pink wine
Salt and pepper to taste

Buy shrimp already shelled and deveined. Rinse under cold water and paper towel dry. In large sauce pan heat butter and oil. Saute onion and garlic; add wine, lemon juice, parsley and salt and pepper. Put shrimp in pot and cook until firm. Put on platter; put in oven at about 400 degrees until tops of shrimp are lightly browned.

Serves 3 to 4 people.
