CHICKEN JAMBALAYA 
3 c. long grain rice
1 lg. fryer
6 med. onions, chopped
1 clove garlic, finely chopped
1 tbsp. bell pepper, chopped
1 tbsp. celery, chopped
1/2 lb. hot smoked sausage
Salt, black pepper & cayenne pepper
1 c. oil

Cut up chicken, wash and season with salt and both peppers. Fry until golden brown in oil over hot fire. Lower heat and add all chopped seasoning except garlic. Cook until all seasoning is clear and tender. Add sausage. Add rice, salt and pepper to chicken and seasoning. Cook slowly for about 15 minutes over low heat, stirring often.

Add 4 cups water and chopped garlic, stir and cover. Do not stir anymore. Simmer over low flame for about 1 hour or until rice is done. Keep covered. Serves 8 - and good!
