LUSCIOUS LEMON COOKIES 
4 eggs
1/2 c. vegetable oil
6 oz. frozen pineapple juice concentrate
1/3 c. lemon juice
2 c. flour
1/4 c. wheat germ
1 tsp. baking powder

Preheat oven to 375 degrees. In a large mixing bowl, beat together the eggs, oil, pineapple concentrate, and lemon juice. Add flour, wheat germ and baking powder. Beat thoroughly. Drop by giant spoonfuls onto non-stick cookie sheets. Bake for 7-9 minutes. DO NOT BROWN. Another easy recipe for kids to make.
