MELOMAKARONA COOKIES 
2 c. light olive oil
1 c. sugar
1 tsp. grated orange rind
1 c. orange juice
1 tbsp. cinnamon
1/2 tbsp. ground cloves
1 c. milk
6 c. flour (all-purpose)
2 tbsp. baking powder

SYRUP:

1 c. honey
1 c. sugar
2 c. water
1 tsp. lemon juice
1 c. chopped walnuts

Beat olive oil and sugar until creamy. Add orange juice, rind, cinnamon, and cloves. Continue beating for 5 minutes. Add milk; beat. Combine flour and baking powder; add to mixture, very gently until flour is all mixed in. Roll pieces like an egg, then flatten a little. Put on buttered sheet and bake in 350 degree preheated oven for 20 to 25 minutes. Mix all ingredients for syrup and bring to a boil, stirring until dissolved, for about 5 minutes. With a slotted spoon, very carefully dip warm cookie into warm syrup. Arrange on platter, then sprinkle with chopped walnuts. Makes 45.
