JAM FILLED OATMEAL COOKIES 
1 c. brown sugar
1 egg, beaten
1 tsp. vanilla
1 c. quick rolled oats
1/2 tsp. each soda, baking powder & salt
Thick red jam
1/2 c. shortening
1/2 tsp. lemon extract
1 c. sifted flour

Combine first 5 ingredients, beat until fluffy. Stir in oats. Add rest of ingredients and mix well. Drop dough on greased baking sheet. Make a shallow well in center of each cookie and fill with jam. Bake at 350 degrees for 15 minutes. Makes 3 1/2 dozen.
