BROCCOLI SOUP 
2 tbsp. butter
1/2 c. onion, chopped
4 c. chicken broth
2 bunches broccoli, washed, trimmed
1 c. heavy cream
1 c. instant mashed potatoes
1 c. Swiss cheese, grated

Saute onion in butter until limp. Add broth. Heat to boiling. Add broccoli. Cook until very done (mushy). While boiling, add potatoes, mix in well. Reduce heat, then add cheese and cream. Heat thoroughly.
