POTATO AND BROCCOLI SUPREME 
3 c. (5 - 6 med.) hot mashed potatoes
3 oz. pkg. cream cheese, softened
1/4 c. milk
1 egg
2 tbsp. butter
2.8 oz. can Durkee French Fried Onions
2 (10 oz.) pkgs. frozen broccoli spears, cooked and drained
1 c. shredded cheddar cheese

Whip together the first 5 ingredients until smooth. Season with salt and pepper to taste. Fold in 1/2 can of onions. Spread potato mixture over bottom and up sides of a 12 x 8 inch baking dish to form a shell. Bake uncovered at 350 degrees for 25 to 30 minutes. Arrange hot broccoli spears in potato shell. Sprinkle with cheese and remaining onions. Bake uncovered for 5 minutes longer.
