CARROT CAKE 
4 eggs
1 1/4 c. oil
2 c. sugar
2 c. flour
2 tsp. baking soda
2 tsp. baking powder
2 tsp. cinnamon
3 c. grated carrots
1/2 c. chopped walnuts
1/2 c. raisins

Use bundt or tube tin. Beat together eggs, oil and sugar. Add flour, baking soda, baking powder, and cinnamon. Add carrots, walnuts, and raisins. Bake 1 hour and 15 minutes at 350 degrees.

CREAM CHEESE ICING:

6 oz. cream cheese
1/2 stick butter
1/2 box confectioners' sugar
1 tsp. vanilla

Soften cream cheese and butter before using.
