3 LAYER SPICY CARROT CAKE 
2 c sugar
2 c flour, self rising
2 tsp cinnamon
4 eggs
1 1/2 c oil
3 c grated carrots
raisins, Optional

Combine dry ingredients and mix well. Add eggs and oil, mix well. Add carrots and beat on medium speed for 2 minutes. Grease and flour 3 (9-inch pans). Preheat oven for 10 minutes at 350°F. Pour batter into pans and bake at 350 for 25 too 30 minutes. Cool for 10 minutes then turn out to cool. When cool spread layers and top with *filling.

Filling, Icing:

1 stick butter
1 tsp vanilla
1 (8 oz) pkg cream cheese
1 c pecans, chopped
raisins, optional

Cream butter and cheese until light and fluffy. Beat in sugar gradually and add vanilla and pecans and raisins. When cake is cooled, ice cake.
