3 LAYER CARROT CAKE 
1 3/4 c. sugar
1 1/4 c. oil
1 tsp. baking powder
2 tsp. baking soda
3 tsp. cinnamon
1/2 tsp. ginger
1 3/4 c. grated carrots
3 oz. crushed pineapple
4 eggs
1 3/4 c. flour
1 tsp. salt
1 tsp. vanilla
1 c. coconut
1/2 c. nuts

Sift together flour, soda, powder, cinnamon, ginger and salt; set aside. Beat together oil, sugar and eggs. Combine egg and flour mixtures and then add remaining ingredients. Bake 35-40 minutes at 350 degrees.

FROSTING:

1/4 lb. butter, melted
1 lb. powdered sugar
8 oz. cream cheese

Beat together and spread on cake and between layers.
