BLUEBERRY NUT BREAD 
1 c. whole wheat flour
1 c. all-purpose flour
1 c. sugar
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt, optional
2 tbsp. melted butter
1 egg, beaten
1 tbsp. grated orange rind
1/4 c. orange juice
3/4 c. boiling water
1 c. blueberries (preferably fresh but frozen also works)
3/4 c. chopped pecans

Preheat oven to 350 degrees. In a large bowl combine the flours, sugar, baking powder, baking soda and salt. Add the butter and the beaten egg to the flour mixture, stirring the ingredients to combine them.

In a small bowl or measuring cup combine the orange rind, orange juice and water. Add the juice mixture to the flour mixture, stirring again until just combined. Stir in the blueberries and pecans and pour batter into a greased 9 x 5 inch loaf pan. Place the pan in the hot oven and bake the bread for 50-60 minutes, or until a tester inserted in the center comes out clean.
