CARROT-PINEAPPLE LAYER CAKE 
Cake:

3 cups flour
2 cups sugar
2 tsp baking soda
2 tsp cinnamon
2 tsp salt
2 tsp baking powder
1 1/2 cup cooking oil
4 eggs
2 tsp vanilla
1 cup crushed pineapple, drained
2 cups raw carrots, grated

Sift together all dry ingredients. Add remaining ingredients in order listed, mixing after each addition. Pour batter into 3 greased layer pans.

Bake at 350°F until done. Cool before frosting.

Frosting:

1 pkg cream cheese
1 stick butter
1 box powdered sugar
2 tsp vanilla
1 cup pecans, chopped

Mix everything except pecans. Beat until smooth. Stir in pecans. Swirl between layers and over top and sides of cooled cake.
