COCONUT CREAM PIE 
1 baked pie shell
7/8 c. sugar
1/3 c. flour
1/8 tsp. salt
2 tbsp. powdered sugar
2 eggs
2 c. scalded milk
1 tsp. vanilla
1/2 tsp. lemon
1 c. shredded coconut

Add coconut to milk. Mix flour, sugar, and salt. Add beaten yolks to dry ingredients. Pour milk on the mixture. Put in double boiler and cook 15 minutes stirring constantly. Flavor and pour in pie shell and top with beaten egg whites.
