PINEAPPLE CHICKEN BREASTS 
boneless skinless chicken breasts (3-4 oz each)
1 (15 oz.) can pineapple slices with juice
bread crumbs
1 egg, beaten
shredded Mozzarella cheese, for sprinkling

Preheat oven to 425°F.

Pound chicken breasts so that all of them are equal thickness.

Bread the chicken by dipping in egg then breadcrumbs.

Place chicken breasts in greased glass dish.

Top each piece with Mozzarella cheese and one pineapple slice.

Bake uncovered at 425°F for 25 to 30 minutes.

Note: This recipe is a base... feel free to add as much or as little as necessary. This tastes great served with white rice.
