CARIBBEAN SALAD DRESSING 
I am a chef at Cafe Mariposa on Utila, The Bay Islands of Honduras deep in the Caribbean. This salad dressing is a favorite of the islanders over the common HIDDEN VALLEY® Ranch! Excellent choice on a Caribbean Salad with fruit.

1 (12 oz.) can pineapple juice
4 tbsp. sesame seed oil
2 tbsp. apple cider vinegar
2 tbsp. fresh parsley (or 1 tbsp. dried)
1/2 tsp. rosemary
1/2 tsp. lemon pepper
1/8 tsp. salt

Mix all ingredients in an airtight container with lid. Shake vigorously for 30 seconds. No refrigeration necessary. Must be mixed well each time served, as the ingredients separate with the oils.

Yields 1 1/2 cups.

WOW! Just went on line to find a fruit salad possibly appropriate. Am amazed: Pineapple chunks, bananas, coconut flakes, tangerines, peaches, Maraschino cherries, grapes, kiwi, blueberries - even black walnuts. Amazing! Per earlier review... I do hope you send in your own preference for the fruit salad you mentioned.
