BELLE'S HOT POTATO SALAD | |
4 cups cooked, peeled, sliced potatoes potatoes 1 cup chopped onions 3 cloves garlic, minced 1 tbsp. butter or olive oil 1/2 cup mayonnaise 1/3 cup cider or red wine vinegar 1 tbsp. sugar 1 1/2 tsp. salt (or less, to taste) 1/4 tsp. pepper (or to taste) 1 tbsp. chopped parsley, basil, oregano (any combo) 1 tbsp. cooked crumbled bacon In a large skillet over medium heat, sauté onions in butter (or olive oil) for 2 to 3 minutes, adding chopped garlic at the last minute. Stir in next 5 ingredients. Add potatoes and sauté, stirring constantly, for 3 minutes or until heated through (do not boil). Garnish with parsley and bacon. Serves 4 generously.
