PENNSYLVANIA DUTCH HOT POTATO
SALAD
 
3-4 potatoes
1 egg
2-4 tbsp. vinegar (to taste)
4 tbsp. water
2-4 tbsp. sugar (to taste)
bacon
onion
salt & pepper

Cube potatoes while hot. Fry bacon until crisp. Drain and break bacon into small pieces.

Mix egg, vinegar, water, sugar and salt and pepper. Pour this mixture over bacon and onion in a pan and cook until mixture becomes thickened. Stir constantly!!!

Pour over potatoes and garnish with green pepper. Can be used over greens too, just toss. Hard Boiled egg can be sliced on top of all if desired.

This recipe is wonderful as is, although I used little red potatoes and honey instead of sugar like they do in Berks County PA where my husband grew up.
The same dressing makes a "wicked good" salad with fresh spinach, mushrooms and sliced red onions.
