"NO CREAM" WHITE CLAM SAUCE 
1/4 c. butter
1 lg. clove garlic, chopped
2 tbsp. flour
2 c. clam juice
1/4 c. chopped parsley
1 1/2 tsp. thyme
Salt & pepper to taste
2 c. minced clams

Heat butter. Add garlic - cook 1 minute over low heat. Use wire whisk to stir in flour and clam juice, constantly stirring, add parsley, salt, pepper and thyme. Simmer gently for 10 minutes. Add clams and heat through. Serve with linguini or pasta. Makes 4 cups.
