YUMMY BLUEBERRY MUFFINS 
1 c. "quick" oatmeal
1 c. orange juice
3 c. flour
1 c. salad oil
3 eggs, beaten
4 tsp. baking powder
1 tsp. salt
1/2 tsp. baking soda
1 c. sugar
3 to 4 c. blueberries (fresh or frozen)

Mix together oatmeal and orange juice; add flour. Then add salad oil and eggs; stir well. Then mix in remaining ingredients, except berries, blending thoroughly. Fold in blueberries. Fill muffin cups 2/3 full. Sprinkle cinnamon, sugar and nuts on top, if desired. Bake at 400 degrees for 20 to 25 minutes. Makes 24 good size muffins.
