CHEWY MACAROON PIE 
2 eggs, separated
1/4 tsp. salt
1 c. sugar
1/4 c. milk
2 tbsp. butter, melted
1 tsp. lemon juice
1/4 tsp. almond extract
1 c. flaked coconut
1 frozen pie crust

Preheat oven to 375 degrees. Beat egg yolks and salt together. Add sugar, 1/2 cup at a time, until blended. Beat in milk, butter, lemon juice and almond extract. Beat egg whites until stiff. Fold egg whites into egg yolk mixture. Pour filling into frozen pie crust. Bake on baking sheet for 30 minutes or until knife inserted near rim comes out clean.
