MICROWAVE PECAN PIE | |
3 tbsp. butter 3 eggs, beaten 1 c. dark corn syrup 1/4 c. firmly packed brown sugar 1 1/2 tsp. all-purpose flour 1 tsp. vanilla extract 1 1/2 c. pecan halves 1 (9 inch) baked pastry shell (in a glass plate) Microwave butter in a 2 cup glass measuring cup at high, 1 1/2 to 2 minutes. Add eggs, corn syrup, and brown sugar. Add flour and vanilla to melted butter. Microwave at medium/high for 2 minutes. Stir in pecans. Pour filling into pastry shell. Microwave at medium 15 to 20 minutes or until sides are firm. Center will be soft but will firm while standing. Cool. |
