CHEWY MACAROON PIE 
2 eggs, separated
1/4 tsp. salt
1 c. sugar
1/4 c. milk
2 tbsp. butter, melted
1 tsp. lemon juice
1/4 tsp. almond extract
1 c. flaked coconut
1 pie shell

Preheat oven to 375 degrees. Beat egg yolks and salt together. Add sugar, 1/2 cup at a time until blended. Beat in milk, butter, lemon and almond extract. Beat egg whites until stiff. Fold egg whites and coconut into egg yolk mixture. Pour filling into pie shell. Bake on cookie sheet for 30 minutes or until knife inserted comes out clean. Cool.
