CHICKEN MEDALLION 
Chicken breast
Egg, salted and beaten
Seasoned bread crumbs
1 can mushroom slices (save liquid)
Strips of Muenster or Jack cheese
Juice of 1 lg. lemon (more to taste)

Cut chicken into bite-size pieces. Marinate in egg at least 2 hours. Overnight is best. Roll chicken bits in crumbs and brown in butter. Place in casserole and top with mushroom slices. Put cheese slices on top. Sprinkle with mushroom liquid and the juice of lemon. Bake about 30 minutes at 350 degrees covered with foil.

Can be prepared in advance and reheated. If you double or triple the recipe you usually don't have to add more egg.
