CURRIED CHICKEN MEDALLIONS 
4 boneless, skinless chicken breasts
1/3 c. butter
1/4 c. chopped onions
1/4 c. chopped celery
1 tsp. curry powder
1/4 tsp. minced dried garlic
Salt & pepper

Wash and pat dry chicken and cut into 1 1/2 to 2 inch square pieces. Melt butter in skillet and add onions, celery and dried garlic. Saute on medium heat until tender. Add curry powder and blend in. Lightly salt and pepper chicken pieces. Cook chicken pieces in butter mixture turning once or twice. When pieces are well coated with butter, put on a lid and lower heat to medium low. Cook about 15 minutes longer. Very good on white rice.
