PUMPKIN MUFFINS 
1/2 c. all-purpose flour
1 1/2 c. unprocessed oat bran
1 c. cooked, mashed pumpkin
1/2 c. skim milk
2 tbsp. oil
1/4 tsp. salt
1/2 c. firmly packed brown sugar
2 tsp. baking powder
2 egg whites, lightly beaten
1 tsp. pumpkin pie spice

Combine flour, bran, sugar, salt, baking powder and spice in large bowl; stir well. Make a "well" in center of the mixture. In a separate bowl, combine pumpkin, oil, milk and egg whites and stir well. Add mixture to dry ingredients and stir just until moistened. Spoon into muffin pans, coated with cooking spray. Bake at 425 degrees for 20 minutes.
