CARROT OAT MUFFINS 
3/4 flour (can use whole wheat)
1/2 tsp. baking soda
2 tbsp. wheat germ
1/2 c. raisins
1 c. milk
1/4 oil
2 tsp. baking powder
1 tsp. pumpkin pie spice
1 c. grated carrots
1 egg, slightly beaten
1/4 c. honey
1 1/2 c. oatmeal

Combine flour, baking powder, soda, spice, wheat germ, carrots, raisins in bowl. Set aside. Combine egg and remaining ingredients in bowl. Stir well and let stand 3 minutes. Make a well in center of flour mixture. Add cereal mixture to dry mixture, stir just until moist. Spoon into greased muffin pans, 3/4 full. Bake at 400 degrees for 18 to 20 minutes. Yields: 1 dozen.

This needs salt. The muffins taste like they might be good if there was salt in the recipe, but instead it's just really disappointing.
