OYSTER DRESSING 
5 tbsp. minced onions
1 1/2 c. chopped celery
4 tbsp. butter
4 c. cooked rice or 3 qts. bread
4 tsp. chopped parsley
2 eggs, slightly beaten
1 tbsp. poultry seasoning
Salt and pepper
2 dozen ground oysters and liquid
1 c. turkey stock

Saute onions and celery in batter. Add rice or moistened bread, parsley, seasonings, oysters, and stock. Mix and heat thoroughly. Add beaten eggs and mix well. Yields: Stuffing for 10 pound turkey.
