YELLOW SQUASH CASSEROLE 
3 c. cooked and drained squash
3/4 stick butter
1 tsp. salt
1/2 tsp. pepper
1 c. evaporated milk
2 eggs
1 c. chopped onions
1 c. grated Cheddar cheese
2 c. cracker crumbs (Cheese Nips)

Mix squash, butter, salt, pepper, and milk. Add eggs, onions, cheese, and cracker crumbs. Pour into greased 1 quart baking dish. Top with Parmesan cheese as liberally as you like. Bake at 375 degrees for about 40 minutes. Yield: 12 servings.
