YELLOW SQUASH CASSEROLE 
3 c. squash, cooked and drained
1/4 stick butter
1 tsp. salt
1/2 tsp. pepper
1 c. evaporated milk
2 eggs, beaten
1 c. chopped onion
1 c. grated cheese
2 c. cracker crumbs

Mix squash, butter, salt, pepper and milk together; add eggs, onion, cheese and cracker crumbs. Pour into greased 8 1/2 x 13 1/2 inch casserole. Bake at 375 degrees for about 40 minutes. Yield: 12 servings.
