GARLIC CHEESE GRITS 
4 c. boiling water
1 c. grits
1/2 tsp. salt
1/2 c. butter
1/2 c. milk
2 eggs, well beaten
8 oz. Velveeta, cubed
1/8 tsp. garlic powder

Can use pre-packaged tube of garlic cheese.

In large pan, bring water to boil. Slowly stir grits and salt into briskly boiling water. Reduce heat to medium-low; cover and cook 5-7 minutes, stirring occasionally, until thickened. Remove from heat. Add butter and Velveeta cubes and stir until melted into grits.

In separate bowl, mix eggs with milk and add about 1 cup warm grits mixture. When thoroughly blended, return eggs, milk and grits to pan of remaining grits mixture. Add garlic powder and additional salt to taste. Pour into greased 2- quart casserole dish. Bake at 350 degrees for 45 minutes or until knife inserted in center comes out clean.
