FRUIT CAKE MUFFINS | |
1 lb. chopped dates 1/2 lb. candied cherries, cut into sm. bits by hand 1/2 lb. candied pineapple, cut into sm. bits by hand Soak above overnight in 1 cup bourbon. 5 eggs 1 c. sugar 2 tsp. baking powder 1 c. flour Beat eggs with sugar. Add baking powder with flour to egg mixture. Add pecans. Add fruit; mix. Put in petit four baking cups in miniature muffin pan. Bake 40 minutes at 275 degrees. Store in air tight container to make and keep moist. |
