POTATO PUDDING (KUGELIS) 
10 to 12 red potatoes
1 med. onion
1 (13 oz.) can evaporated milk (hot)
6 eggs
1/2 tbsp. flour
1/4 lb. butter
1 tbsp. salt
1 pkg. bacon (optional)

Peel and grate potatoes and onion finely. Drain most of starch. Add hot evaporated milk and eggs one at a time. Cut up and add butter. Add salt, flour, and fried crumbled bacon. Pour into well greased 9 x 9 x 3 inch pan. Bake at 350 degrees about 2 hours. Bubbling will disappear when removed from oven. Top should be light brown. Serve with sour cream or applesauce. Serves 15.
