FAMOUS SWEET POTATO PUDDING 
1 lb. cooked and peeled sweet potatoes
1 c. sugar
1/2 c. butter, melted
6 egg yolks, well beaten
1 tbsp. grated lemon rind
1/4 tsp. mace
1 c. orange juice
6 egg whites
1 tbsp. slivered citron

Rub the sweet potatoes through a sieve. Add one cup of sugar and butter; combine with beaten egg yolks, lemon rind, mace, and orange juice. Beat the egg whites until stiff and fold carefully into the sweet potato mixture. Pour the pudding into a well greased three quart baking dish; sprinkle with 1/4 cup of sugar and slivered citron. Bake in a 350 degree oven for about one hour.
