POTATO PUDDING (KUGELIS) 
8 to 10 lg. potatoes, grated
1 med. onion
1 tsp. baking powder
2 tbsp. flour
Salt and pepper to taste
2 eggs
4 slices bacon

Peel and grate potatoes and onion. Cut bacon into small pieces and fry until crisp. Pour fat and bacon over potatoes. Add rest of ingredients and blend well. Pour into greased pan (size that will give you a depth of 2 1/2 to 3 inches of potato). Bake at 450 degrees for 15 minutes then reduce to 350 degrees and bake approximately 45 minutes or until nicely browned. Cut into square or serve with a spoon. May be served with sour cream.
