CAVATELLI WITH RICOTTA 
1 lb. ricotta cheese
1 egg
2 1/2 c. flour
1 tsp. salt

Mix together to form soft dough. Dough must be firm so it won't stick. Roll dough into rope about 2". Cut into 1" pieces. Make indentation on each piece by pressing firmly with 2 fingers against each piece sliding fingers toward you. Use flour to avoid sticking. Cook in water with salt and boil until they come to the top. Drain and serve with your favorite sauce.
