BETH'S SAUSAGE AND COUS COUS STIR FRY | |
I live on the recipe. It's filling, very cheap and relatively healthy! Also works really well meat-free for the vegetarian/vegan alternative!!! 3 sausages 2 carrots a handful of florets of broccoli 1 smallish onion 8 oz. beansprouts garlic a handful of white cabbage 3 tsp. soy sauce 3 tsp. oil (olive oil, sunflower, etc!) 2 small portions of cous cous Preheat the grill and cook the sausages. Put the cous cous in a bowl and cover it with boiling water (it'll say on the back of the pack how much is needed!) Put the oil in a wok or skillet and heat it gently. Wash all the vegetables, peel the carrots and chop the broccoli (leaving some of the stem on, its the best bit!), place them in the wok, keep an eye on them for 2 to 4 minutes until them start to soften and slightly brown. Chop the onion up and finely chop the garlic too and place in the wok with the cabbage and beansprouts, Stir them for two minutes until they soften. The sausages should be cooked by now, take them out of the grill and cut up into smallish pieces and put in the wok for a minute or two. Put the cous cous in the wok and put the soy sauce in too (add more or less to taste). Serves 2. Submitted by: Beth |
