NO-BAKE PEANUT BUTTER OATMEAL
COOKIES
 
2 c. sugar
1 stick butter
1/2 c. milk
1 tsp. vanilla
2 c. oatmeal
1/2 c. peanut butter

Mix sugar, milk and butter in a medium cooker. Bring to a boil and allow to boil for three minutes and remove from stove. Next add vanilla and the peanut butter and stir well. Last, add oatmeal a little at a time to desired taste and thickness. Drop by spoonfuls onto wax paper, or pour into a buttered pan and cut into squares after it cools.

This is an excellent recipe and aren't cookies supposed to be sweet? I have found for the naysayers of sugar that you can cook the recipe as follows just add a large pinch of kosher salt to recipe to cut the sugar and it adds to and brings out the chocolate cocoa taste without changing the recipe too much.

Love how easy these are to make. I sprinkled just a few crystals of coarse sea salt on top to cut the sweetness just a bit. The crushed peanuts in the chunky peanut butter adds a nice depth to them also. These are very tasty.

Instead of 2 c sugar I use 3/4 c sugar and 3/4 c dark brown sugar. I also add 1 tsp salt. It evens out the sweetness and I think cutting back on the sugar and using half brown sugar gives these a wonderful buttery caramel taste. I figured this out after making these 4 times. I have to eat gluten free,and everybody loves the way I make these!

Added one egg, 1/2 cup more oats, crushed cashews, choco chips, spoonful of olive oil, awesome idea. I made ten kinds pecans, red chili flakes, raisin, chopped dried prunes. love this great idea. no bake, wow!
