DIANA'S LOW-SUGAR PEANUT BUTTER
OATMEAL COOKIES
 
Using no-sugar-added applesauce and real maple syrup rather than imitation reduces sugar and adds great flavor - these cookies are soft and cake-like, and are much healthier than the traditional peanut butter cookie. Kids really eat 'em up!

2 1/2 cups all-purpose flour
2 cups old-fashioned oats
1 1/2 tsp. baking soda
1/2 tsp. salt
1 cup (2 sticks) butter, softened
1 cup peanut butter
1 cup applesauce
1/2 cup packed brown sugar
1/4 cup maple syrup
2 eggs
1 tsp. vanilla

Stir together flour, oats, baking soda and salt. In separate bowl beat together butter, peanut butter, applesauce, brown sugar and maple syrup. Add eggs and vanilla and beat until smooth. Add to dry ingredients and mix well. Drop by teaspoon onto non-stick cookie sheet, 1-inch apart.

Bake at 350°F for 8 to 10 minutes.

Makes about 80 cookies.
