MARY KIDD'S CARROT CAKE 
2 c. cake flour
2 tsp. baking powder
1 1/2 tsp. baking soda
2 tsp. cinnamon
1 1/2 c. salad oil
2 c. sugar
4 eggs
2 c. grated carrots
1 (8 3/4 oz.) can crushed pineapple
1/2 c. chopped pecans

Sift together first 4 ingredients. Cream oil and sugar. Add eggs, one at a time, beating after each addition. Add dry ingredients; mix well. Add carrots, pineapple, and nuts.

Pour into greased and floured pans and bake at 350 degrees for 35-40 minutes. Makes 4 (7-inch) or 2 (9-inch) layers or 1 (10 x 13) layer. Bake a little longer if using 10 x 13 pan.

ICING:

1 box powdered sugar
1 stick butter
1 (8 oz.) cream cheese
1 tsp. vanilla
