MARY'S CHICKEN DELIGHT 
3 lbs. chicken
2 pkgs. Italian salad dressing mix from Good Seasons
3 tbsp. flour
2 tsp. salt
1/4 c. lemon juice
2 tbsp. butter (softened)
1 1/2 pts. salad oil
1 c. milk
1 1/2 c. pancake cake mix
Combined with 1 tsp. paprika
1/2 tsp. sage
1/4 tsp. pepper

Wipe chicken dry. Make paste of next 5 ingredients. Coat chicken. stack pieces in bowl. Cover and refrigerate several hours.

1 1/2 hours before serving, heat 2 inches of oil in a frying pan to 425 degrees. Dip pieces in milk and then in pancake mix - coat well. Lightly brown about 4 minutes each side. Place in one layer in shallow pan. Bake 35 minutes at 350 degrees.
