MAPLE - PECAN SWEET POTATOES 
8 medium sweet potatoes
1/4 c. butter
1/2 c. firmly packed brown sugar
1/3 c. maple syrup
1/4 tsp. salt
1/8 tsp. pepper
1/4 c. pecan halves, toasted

Peel and chunk sweet potatoes. Add to 4 inch boiling water. Cook over medium heat about 20 minutes until tender. Heat next 5 ingredients to boiling. Reduce heat and cook until syrup mixture is thickened, about 2 minutes. Turn into serving dish. Top with pecans and syrup mixture.
