MAPLE PECAN SWEET POTATOES 
8 med. sweet potatoes (3 1/2 lbs.)
1/4 c. butter
1/2 c. brown sugar
1/3 c. maple syrup
1/4 tsp. salt
1/8 tsp. pepper
1/4 c. pecan halves

Heat 4 inches of water to boiling in large pan. Peel potatoes; cut into 1 1/2 inch chunks. Cook 20 minutes. In 1 quart pan, combine butter, brown sugar, maple syrup, salt, and pepper. Heat to boiling over medium high heat. Reduce heat to low. Cook, stirring constantly, until mixture is clear and thick for 2 minutes. Drain sweet potatoes. Put in serving dish and cover with pecans and syrup mixture. Yield: 8 servings.
